Cocktails and denial anyone?


FROZEN (COCONUT RUM!) LEMONADE

Wool, corduroy (yikes!) & school supplies are filling the retail shelves at a much too rapid pace for my taste. I am just not yet ready for back-to-school and all that it entails.  Even if the days are subtly getting shorter, sipping on frozen lemonade will draw out the season, until I am truly ready to let it go in lieu of car pool, sports, PTA and homework. 

As an added plus, you can have this grown-up take on lemonade stand refreshment ready to go in just a matter of minutes...

Frozen Lemonade (with a dash of!) Coconut Rum
  • 9 cups ice cubes, crushed
  • 9 oz. frozen lemonade concentrate (roughly 18 Tbsp.)
  • 3/4 cup coconut rum
  • lime wedges & fresh mint sprigs for garnish
Pour  ice, lemonade, and rum into a blender. Blend until slushy. Pour into glasses & garnish with lime wedges & a sprig of fresh mint. Serves 6.
